  • 400ml of coconut milk

  • 12 green prawns, deveined, with heads and tails intact
  • Thai basil for garnish

  • 2 tablespoons of fish sauce
  • 1 tablespoon of shaved palm sugar
  • 5 crushed garlic cloves
  • 5cm piece of ginger (25g), roughly chopped
  • 2 lemongrass stalks, white parts only, bruised and roughly chopped
  • 3 eschalots, halved
  • 3 long green chilies
  • 1 small bunch of coriander
  • 4 kaffir lime leaves

Method of preparation of Green Thai Fish Curry:

  1. To prepare the green Thai Fish curry paste, blend all ingredients in a food processor until a smooth paste forms. Alternatively, you can use ¼ cup (75g) of high-quality curry paste instead.
  2. In a saucepan, heat oil over medium heat. Add the curry paste and sauté for 2-3 minutes until it releases its aroma. Introduce the eggplant and cook for another 2-3 minutes, then pour in the coconut milk and 1½ cups (375ml) of water.
  3. Allow the mixture to simmer for 8-10 minutes, then add the fish and prawns, cooking for an additional 5-6 minutes. Once done, remove from heat.
